What exactly is a makhana?

Makhana, also called fox nuts or puffed water-lily seeds, are the seeds of the lotus flower, hand-harvested from the lily ponds of Bihar, India. Sun-dried, then gently popped with heat (never fried), each seed blooms into a light, airy pearl.
